Created in 1929 by Emile Refouvelet, Aveze is an all-natural gentian liqueur produced from the roots of the large, yellow gentian plants, which are native to the mountains of central and southern Europe. The Aveze distillery is located in France's picturesque Auvergne region, in the heart of a large volcanic national park, where the region's elevation, air quality and fertile soil allow the gentian to thrive. Aveze is created by harvesting fresh roots from the gentian plants, which are then sliced and left to macerate in alcohol for nine months, along with other carefully selected plants to balance the delicate flavor profile. After distillation, the liqueur rests for a minimum of six months before filtration and bottling occurs. Containing more gentian than all other gentian liqueurs, this complex aperitif offers distinctive, bittersweet herbal notes accented by hints of anise, orange peel, mint and earth.
